comes from an idea of Sofia Malagoli, the soul of Acetaia Malagoli Daniele, to enhance the family’s black gold, which is the Traditional Balsamic Vinegar of Modena DOP.


With the support of expert Maîtres Chocolatiers, Sofia Malagoli has created a real jewel to taste.


Each chocolate praline is a blend of authentic DOP Traditional Balsamic Vinegar of Modena, high quality chocolate and precious 22 carat gold.


This is the exclusive edition of Sofia, un gioiello di passione, the perfect combination of taste and excellence consistent with the traditions of Modena.

How did Sofia born?


Sofia Malagoli was looking for increasing the products on her list, she wanted to have not only the Traditional Balsamic Vinegar of Modena, but also others that should always have been at the top of quality.

She was thinking to create something special, something different that could be unique. She thought to chocolate pralines but at the begigging she didn’t understand immediately how to do them. She needed to understand better how to put together the pieces of the puzzle.

A day she met an entrepreneur in his factory - he owns one of the biggest acetaie in Modena - and she was very curious to know something more about him.

She didn’t know anything about him, except his name, and she believed to stay in his factory, for visiting it, not more than a couple of hours.

He was really kind to her, he explained her how he begun his career, what he did to grow up and she was really fashinated to this man, so humble and so competent.

She spent there more or less six hours and at the end she learned a lot, about life and job. Thanks to this man she was able to grow up a little bit more and she had the great opportunity to have his life example. She definitely understood what would have been better to do about her new project!

She doesn’t know how Sofia will go, she doesn’t know if it will succeed or if there could be someone capable of doing it better better than her. She knows her heart is there, into her chocolates, and however it will go, it will be a success because it’s the result of her sacrifices, it’s the best expression of her passion, it’s an other piece of her grouth puzzle.

Like the acetaia, Sofia is the new Sofia’s project, it’s a piece of her heart, it’s a piece of her everything!

Dear Friends,

we are glad to introduce you to edible gold!

Sometimes when we are showing our new gold chocolates, people are astonished and quite skeptic at the same time about them and towards the possibility to eat the gold.

We'd love to reassure you about it, humans can eat the gold and it doesn't have any side effect for health.

In particular, the gold we use meets the technical safety requirements of the European Parliament directive 94/36/EC, so don't worry, it can absolutley be used for human nutrition!

Furthermore there are many chefs who have been using it in the kitchen for several years; unfortunately its use is not an absolute novelty!

This noble element of the Periodic Table is 100% natural. Created by nature and worked by men.

Gold is melted in a crucible, then made an ingot, then pressed many times until it forms a thin sheet. Extruded by rotating rollers, it comes to form a sheet of large surface and thickness around 100microns. Then cracked in various shapes, to form light, almost impalpable flakes.

After graduating from high school, Sofia decided to follow her father’s footsteps and study Civil Engineering at University of Bologna. Yet, after her first year of University, Sofia had the idea to turn Daniele’s passion for Traditional Balsamic Vinegar of Modena into a business. Thanks to her entrepreneurial, she started to promote their Acetaia and their Traditional Balsamic Vinegar of Modena not only among family and friends. She started planning events at the acetaia, welcoming local and international tourists and building a solid sales network.

During Milan Expo 2015, the Municipality of Modena granted Sofia the possibility of selling her products in a Temporary Store in the heart of the city, the perfect location to promote the culinary excellence of her territory and present her Balsamic to tourists and locals. Her family was very enthusiast about her result and fully supported Sofia during the six-month opening of the shop.

Now Sofia continues to work for her company and she always tries to do her best for her customers in order to give them the best offer.

Sofia commited the Balsamic objective with all herself and now she is one of the council member of Federaceti and the consultant of the President of the DOP Traditional Balsamic Vinegar of Modena Consortium.

She has been to Japan in april 2017 to Wine&Gourmet exhibition and she did a seminar about the Traditional product and recently also in Luxembourg in a high school to explain to the students the differences between the products people can buy to the supermarket or in gourmet shops.


Her last creation is represented by the chocolates where is wonderfully expressed her great passion for her job!
